    Something I haven't had in a while 'cause it's been a while since I was seriously happy-faced, is truly what I would call a concoction.....

    Place contents of one or two cans of sardines (I prefer the ones in oil) on a plate and top with the following:

    - Garlic powder (however much you want)

    - Finely chopped onions

    - Hot sauce (I prefer Melinda's XXXX reserve)

    Personally I eat this with crackers and then chew one Pepcid AC for preventive measures.

    BURP!!!!

     Cereal, any cereal and half and half cream. When I was a kid my Mom would buy fresh milk from a friend and it always had cream on top. I would sneak in the fredge and steal it. Man that was good.

     Sometimes I'll throw together a quick omelette. 

    Tonight it was leftover taco meat (hamburger that had been browned and seasoned with Tex Joy taco seasoning) and a pile of shredded Mexican cheese blend from Sam's.  Topped with a lttle Red Gold salsa and more cheese.  

    Otherwise I'll make a pizza omelette.  Whatever pizza type meats we have on hand and lots of mozzerella and some parmigian reggiano.  Topped off with some diced or crushed tomoatoes seasoned with some basil, maybe some garlic, etc and more cheese. 

    Sorry.  No pics tonight guys.  Somebody had put my skillet in the dish washer Sad (anodized aluminum alloy looses it's seasoning in the dishwaser) and besides I was hungry.  

    If I'm lazy I'll just scramble the eggs with taco meat, cheese, and some salsa.  

    Sunburnwilly's pizza sure looks good but too many onions and jalapenos for me.  I also can't stand mustard for some reason so I'd have to lightly dust my hamburger in catsup.

    ketchup goes great with everything! My mom used to threaten to give me and my dad just a bowl of ketchup and loaf of bread for dinner. before i had to knock off the late night eating, i loved some Linguicia and monterey jack cheese slapped between two pieces of sourdough bread.

    every now and then I get nostalgic and think about my folks. When I was a boy they would sometimes have sardines on saltines. It was too nasty for me at the time. Suppose it is an acquired taste.

    So occasionally I'll get a can of sardines and crackers out of the pantry for a snack. Of course, I like to complement the taste with a touch of mustard and bread and butter pickles.

     

    One other thing I enjoyed as a kid, but haven't fixed in years, is fried SPAM. It made a good sandwich or even as the meat for a meal for a family of four.

    A double bowl of whatever ice cream is on sale this week washed down with a shot of Bailieys or Draumbuie.

    Oh yeh. Fried baloney sandwiches.  My family used to travel from Little Rock to Jackson, MS to visit my grandparents on the farm, outhouse and all.

    We'd arrive after dark and my grandmother would fix a supper of fried baloney sandwiches. just the fried slices, miracle whip and white bread. I thought there was nothing better. I decide to fix it once a year maybe, but it never seems as good as it did in her kitchen.

    Then there'd be New Year's Day dinner of squirrel (at least three or four my grandfather had shot hunting) and dumplings. I never could get in to cracking open the skulls to eat the brains, but that was part of the adults' idea of a delicacy.

    Back when I was just out of the Air Force and penniless I would have fried baloney or '"flat steak" 2 or 3 times a week along with SOS or  ---- on the shingle(sausage gravy poured over cheap biscuits). I make it a point to avoid both these days- after hundreds of meals eating the same stuff it got old real fast. When I was very young I would go out with 4 or 5 .22 bullets and kill/clean several squirrels. Better bring back the same number of squirrels as bullets that you left with or catch heck. My grandmother would fix squirrel dumplings. Sounds disgusting but really not bad. Never did the brain thing. I ate pies baked with birds killed form the back yard with my bb gun. Fried rabbits- doves- and just one possum. The possum is the most disgusting thing that I ever tried to eat. Once was enough. Meat was a luxury and wild game was a bonus. I think about this sometimes when I am wolfing down a big Porter house or a plate of expensive raw fish and washing it down with a nice bottle of cabernet.My kids have no clue how good they have it.

    I would eat those things way back when I was in the service and we were out in the field . But I never aquired a taste for them . I prefered a cold serving of chilli mac or whatever MRE's we had on hand .

    That's really what this thread is all about . Can't go wrong with an omlette regardless of the filling . More cheese please ! An omlette should be the first thing a young man or women learns how to make when they head out on they're own . These days I prefer the frittata , just heat the leftovers or whatever in a skillet and then pour the egg mixture on top . Stir and let set a bit then throw into a 350 degree oven for 6 or 7 minutes . Top with lot's of cheese of course .

    Well , if I were ever to make one for you I would keep your dietary restrictions in mind .
